CERTIFIED FOOD PROTECTION MANAGER (CFPM)
Each food establishment shall be under the operational supervision of a certified food service sanitation manager. An ANSI accredited Certified Food Protection Manager (CFPM) certification obtained through a course and passing the exam is required.
The Illinois Food Service Sanitation Manager Certificate (FSSMC) was eliminated in 2018. If you already have a FSSMC, it will remain valid until it's expiration date. At which point, in order to renew you just need to complete the CFPM course from an ANSI approved organization.

FOOD HANDLER CERTIFICATION
- Any food handler, unless that person has a valid Certified Food Protection Manager Certification, is required to complete a food handler training course. A food handler is defined as an individual working with unpackaged food, food equipment or utensils, or food-contact surfaces. The State of Illinois Food Code requires that Risk Category 1 and 2 facilities employ one or more certified managers to supervise food service operations.

ALLERGEN AWARENESS TRAINING
Also beginning January 1, 2018, the Illinois Department of Public Health is requiring all certified food protection managers employed at a risk 1 restaurant to obtain training in allergen awareness from an American National Standards Institute (ANSI) accredited provider within 30 days of employment and every 3 years thereafter.
